My Current Favorite Veggies You Must Grow (and eat!)
I’ve got veggies on my mind. What’s new? For today’s post, I put together a list of my 5 favorite veggies of the moment. These are the vegetables I get excited about on the daily that bring a vibrant touch to our dishes.
Calabacita
You can grow this squash family variety easily from seed or pick it up from your local nursery. It grows like any other squash or zucchini, in abundance. It has beautiful markings on it and just makes me happy to look at. You can stew it, sauce with corn, and really just use it as a substitute for zucchini to switch things up.
Bok Choy
An interesting green option that will add a bit of uniqueness to any dish you’re creating. Their stems will hold dirt like you wont believe (give them a good scrub!). These are great in Indian dishes, braises, and hotpots. A delicious and different way to make sure you’re getting your greens in.
Kale
I use kale for so many dishes in my kitchen so I just had to include it. Whether you’re making a summertime salad or making a cozy stew in the winter, kale is your best friend. It’s such a hearty plant and will last you potentially through the whole year, which is what I love the most about it. We’ve had the same kale plant for a year and half and it’s still producing tons of leafy greens on the regular.
Tomatillo
Versa verde anyone? This plant is probably in my top 3 for favorite plant to grow. The plant itself is so beautiful in the garden. I will say, it’s probably my favorite looking plant I have right now. We love making different Mexican dishes in our household so having fresh salsa verde on the regular takes all our recipes to the next level.
Cucumber
Melons, cucumbers, and squash (members of the cucurbit family) are easy to grow, and abundant to harvest. I love using my cucumber to make a fresh salad. I usually add feta, tomatoes, red onion, olive oil, salt and pepper — and wallah, you have yourself are refreshing delicious cucumber salad.
